present-day New Orleans cuisine.
This is Creole Nouvelle.
Roux respects the iconic centuries-old restaurants
of the French Quarter, and draws inspiration
from the post-Katrina kitchens of the “New Nola.”
We do not aim to recreate culinary history,
but instead learn from it – and make it our own.
The result? An entirely new fresh take
on the beloved traditions of the region.
Roux relies on many products brought
in directly from New Orleans, and we
are always mindful of authenticity,
even as we explore the changing
landscape of the New Orleans palate.
