Tama’s Japanese Cuisine and Sushi
Hakaru Tamaki moved to Jacksonville as the first sushi chef in the area in 1981. Having also worked in Manhattan and Tokyo, Tama has the unusual distinction of having been classically trained in Japan. Finally fulfilling a lifelong dream of owning their own restaurant.
The logos on the wall were Japanese family crests that made their first appearance during the Heian period (794 – 1185 A.D.) as heraldic devices carried by the nobility of the imperial court. During the Edo period, 1600 – 1867, the crests attained the height of their development and application. Since that time, they have declined in popularity, although they still persist throughout the modes and manners of Japanese life. The crests have gradually taken on the nature of decoration, losing the original function of representing family names.
