Owners Denise & Anthony Sierra were introduced to the restaurant business, and each other, by Denise's brother-in-law, Mark Tryhubczak. Mark was a chef and restaurant owner who would have a profound influence on the two and undoubtedly inspire the current Burrito Company. Denise began as a dishwasher, and under Mark learned everything from food prep to waiting tables to tending bar. Anthony met Mark on Block Island, where he trained as a cook with Mark's guidance.
In 1991, Mark opened the Block Island Burrito Company, a small take-out place beneath the National Hotel. He asked Denise, at that time a server at the Bocce Club restaurant in Woonsocket, and Anthony to help him with the new business. Anthony and Denise were thus introduced.
A year later, Anthony and Denise left the island, and Anthony opened up a new instance of the Block Island Burrito Company at URI. During this time, the Block Island Burrito Company proved extremely successful and Mark opened a sister restaurant, Pastrami Mark's. Mark also began to chef on cruise ships, dividing his time between the island and on the sea.
