Toby Smithson is a Registered and Licensed Dietitian Nutritionist, and national spokesperson for the Academy of Nutrition and Dietetics (formerly the American Dietetic Association). She is a certified diabetes educator, and holds a certificate of training in adult weight management. Toby is past president of the Illinois Dietetic Association (2007-2008), and received the 2009 Outstanding Dietitian of the Year for the state of Illinois. In October 2012 she was inducted into the University of Illinois Extension Program’s Hall of Fame for her community work in educating consumers about healthy eating and active living. Toby is currently completing a Master’s of Science in Nutrition and Wellness at Benedictine University (graduation May 2014), and was recently appointed to the board of directors of the Illinois Diabetes Legislative Caucus Foundation.
Toby’s expertise in diabetes management is unique. Beyond her professional credentials to practice as a Registered Dietitian Nutritionist and Certified Diabetes Educator, she has effectively managed her own Type 1 diabetes for over 45 years to achieve a “text book” personal health status. She is the primary author of Diabetes Meal Planning and Nutrition for Dummies (John Wiley & Sons, 2013). This hard earned credibility makes her an invaluable resource to individuals, community groups and media.
Toby’s media work over the past year includes over 100 print, television, and website interviews. She writes a monthly food column in the food section of the suburban Chicago Daily Herald Newspaper, and routinely accepts interviews for both local and national newspapers, magazines, radio, and websites. Media outlet interviews include WebMD, Huffington Post, The Chicago Sun-Times, The Wall Street Journal, Today’s Dietitian, Diabetes Forecast, Diabetic Living Magazine, Weight Watchers Magazine, Spry Magazine, Prevention Magazine, Every Day Health.com, The Jewish Post, WGN Chicago tv, WTTW PBS tv, and WRLR radio.
Toby’s philosophy is all foods can fit, and she works with clients to individualize meal plans to make healthier eating a sustainable lifestyle choice.
